Mexican Lager (Lutra Kveik Version)
Hello Homebrewers!
As the weather warms up, it becomes more difficult to manage fermentation temperatures, especially for lagers. But, we have the Limbo Competition coming up soon, and low-ABV beers are all the rage right now!
So, I put together this recipe for you … a Mexican Lager, but with Lutra Kveik yeast that operates at much higher fermentation temps, ie 72 degrees to Kveik might *behave* like a lager!

Profile
- Batch Size: 5 gallons
- Boil Time: 60 minutes
- Target Fermentation Temp: 70–72°F
- OG: 1.046
- FG: 1.009
- ABV: 4.8%
- IBU: 18
- SRM: 3-4
Water Profile (Clean Lager Profile)
- Ca:40, Mg:5, Na:10, Cl:45, SO4:50, HCO3:<50
All-Grain Recipe
Grain Bill
Ingredients:
- German Pilsner Malt .. 7.5 lb
- Flaked Corn .. 1.5 lb
- Vienna Malt .. 0.5 lb
Mash
- 150°F for 60 min
- Mash Out 168°F for 10 min
Collect ~6.5 gallons for boil.
Extract Version
Steeping Grains
- Flaked Corn .. 1 lb
- Vienna Malt .. 0.5 lb
Steep 20 minutes at ~155°F, then remove grains.
Fermentables
- Pilsner LME .. 6lb
- Corn sugar (dextrose) .. 0.5lb
Hops
- 1 oz Hallertau Mittlefruh for 60mins
- 0.5 oz Tettnang for 15mins
Boil Additions
- 1 whirlfloc tablet at 15mins
- 1 tsp yeast nutrient at 10mins
Yeast
Omega OYL-071 Lutra Kveik
Pitch one fresh pack per 5 gallons
Fermentation
- Primary fermentation .. 70–72°F .. 7-10 days
- Optional cold crash .. 34–38°F .. 3–7 days
Lutra typically finishes extremely quickly and produces a very clean profile even at household temperatures.
Packaging
Bottle Conditioning
- Add 4.5 oz dextrose dissolved in boiled water to reach approximately 2.5 volumes CO₂.
Kegging
- Carbonate to 2.5–2.6 volumes CO₂.
Expected Flavor Profile
- Very clean fermentation
- Crisp pilsner malt backbone
- Light corn sweetness
- Soft noble hop bitterness
- Highly drinkable, summer-appropriate lager character
